"Pup Cake" Recipe

So far we have celebrated 3 of the 8 birthdays that happened in the month of August, one of them being CoDiY’s {but we’ll get to his in a few post}.  The first birthday that gets honored took place on the first day of August, and it happens to be our very own Diesel Hoss’
Diesel turned 3 YEARS OLD {our baby boy is growing up! *tear*}! 

We normally get him a cake from a bakery in Old Town Spring called, Woof Pet Bakery & Boutique:

But since his birthday was on a Wednesday this year and we weren’t having a big party for him {I’ll give you a second to process that info & judge us… and yes, we’re being serious, people actually come over for Diesel’s birthdays, the proof is below}

And for his 1st birthday, the family met up at a dog park... it was HOT!  We didn't stay long 
Moving on...  Since we didn’t have a gathering this year, I baked him a sweet potato cupcake cake with peanut butter icing, and popcorn sprinkles

After cake, it was present time & Diesel LOVES gifts.  We can’t let him see anyone’s birthday/Christmas gifts if it’s in a bag because he’ll stare at it, whine, & "pout."  It’s pathetic & adorable all at the same time.
Once he got them all opened, it was time to play {typical kid}

If you wished you knew the recipe for his cake… granted
Ingredients: {This recipe is for the giant cupcake tin, half everything to for a normal round/cake}
Cake:
· 4 Eggs
· 2 Cups of Flour
· 3 sweet potatoes {cooked & mashed}
· 8 oz. of butter
· Saran wrap

Icing:
· Peanut butter
· Popcorn
· Food Coloring

*NOTE: NEVER use Baking soda or Baking powder, it is VERY harmful to dogs {it messes with their kidneys}

Directions:
Cake:
· Preheat the oven to 350 degrees
· Wrap sweet potatoes in Saran wrap & cook them in the microwave for 20 minutes
   {8 min. per potato, or until they’re super soft}
· Melt the butter in a medium size bowl
· Beat in the eggs
· Add the mushed sweet potatoes
· Add flour
· Spray cupcake tin with cooking spray {VERY important!  I forgot to do this, but luckily the cake had only been in the oven for 3 minutes, so I still had time to pour out the mixture and spray the pan down, and re-pour the mixture back into the cupcake tin, so save yourself the trouble!}
· Pour the cake mixture in the top of the cupcake tin first & then in the bottom {make sure you don’t fill it to the top, you need to leave room for expansion}
· Bake it for 60 min
· Let the cake cool for 15 min out of the oven
· Flip over onto two plate
· Place the cupcake top onto the bottom
· VIOLA!

Icing:
· 2 spoon scoops of peanut butter
· Add a drop or two of the food coloring {your choice of color}
· Stir together
· Smear on like icing

*Add popcorn as sprinkles just before serving as an added touch
